- 7-8 garlic cloves, chopped fine
- broccoli, stems and florets
- 1 can chickpeas
- 1 tbsp soy sauce
- 1 tbsp garlic chili sauce
- 1 tsp cornstarch
- 0.5 cup cashews
- Brown Rice (optional)
Steps
- combine cornstarch, chili sauce, and half the soy sauce in a small bowl. Whisk until combined.
- Chop garlic.
- Chop broccoli stems from broccoli. Continue to chop the stems into bite-sized pieces.
- Set large skillet on medium to medium-low heat. Add olive oil and garlic. Cook, mixing around gently, until the garlic starts to become fragrant.
- Add broccoli stems ONLY. Increase the pan to medium heat. Cook, stirring continuously, about 2 minutes.
- Add the remaining broccoli florets. Continue to cook and stir, another 3 minutes.
- Add the cashews and chickpeas. Continue cooking for another 3 minutes.
- If rice was also made, top rice with broccoli.
