Chickpea Cashew Broccoli Stir-Fry

Steps

  1. combine cornstarch, chili sauce, and half the soy sauce in a small bowl. Whisk until combined.
  2. Chop garlic.
  3. Chop broccoli stems from broccoli. Continue to chop the stems into bite-sized pieces.
  4. Set large skillet on medium to medium-low heat. Add olive oil and garlic. Cook, mixing around gently, until the garlic starts to become fragrant.
  5. Add broccoli stems ONLY. Increase the pan to medium heat. Cook, stirring continuously, about 2 minutes.
  6. Add the remaining broccoli florets. Continue to cook and stir, another 3 minutes.
  7. Add the cashews and chickpeas. Continue cooking for another 3 minutes.
  8. If rice was also made, top rice with broccoli.
