Steps
- Prep: Preheat the oven to 350°F
- Combine dry ingredients: in a medium bowl, whisk together flour, salt, baking soda.
- Beat. In another medium-large bowl, beat the sugar and butter using an electric beater on low until combined and fluffy. Add in egg and extra egg yolk, beat in again on low until just combined.
- Form cookie dough. Line a cookie sheet with parchment paper [see tip if you don't have]. In a small bowl, add some sugar. Scoop out a heaping tablespoon of dough and roll into a round ball with your hands. Roll in the small bowl of sugar to coat. Place onto the cookie sheet, slightly patting down the ball so it's a litle oval shaped.
- Bake in the center of the oven until the centers are just cooked, about 10-12 minutes. Do not overbake.
Tips
- Darker cookie sheets will cause the bottoms of the cookies to brown faster. If using (or if using a sheet without parchment paper), reduce cooktime by about a minute or two.
- If using salted butter, reduce the kosher salt by half (1/2 tsp)
