This Starbucks-style coffee cake is the perfect companion to your morning coffee or afternoon tea. With its buttery, moist base and generous layer of cinnamon-sugar crumb topping, each bite is a delightful mix of softness and crunch.

Steps

    Prepare the Topping

    1. Add dry ingredients: In a medium bowl, combine flour, brown sugar, granulated sugar, cinnamon, and salt.
    2. Mix in butter: Pour in the melted butter and mix until crumbs form. Set aside.

    Make the Cake Batter

    1. Prepare Oven and Pan: Preheat the oven to 350°F. bake 5 Grease and flour a 9x13-inch baking pan or line it with parchment paper.
    2. Combine dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
    3. Add Butter, Sugar: In a large bowl, beat the softened butter and sugar with an electric beater until light and fluffy (about 2-3 minutes).
    4. Add Eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
    5. Combine dry ingredients: Alternate adding the dry ingredients and the sour cream to the butter mixture, starting and ending with the dry ingredients. Stir in the milk until just combined.
    6. Add to pan: Spread the batter evenly into the prepared pan.

    Bake

    1. Bake without topping: Put the pan with batter in the oven for 15 minutes
    2. Add Topping: Remove from the oven and quickly top with the topping evenly.
    3. Finish Baking: Place back into the oven for another 20-25 minutes, until a toothpick inserted in the center comes out clean.
    4. Let cake cool in pan completely, about 5 minutes.
    5. Serve immediately

storage

Keep refrigerated for up to 3 days in the fridge. Reheat in an air fryer or oven.
