Ingredients
Dough
- 2.5 cup all-purpose flour, plus extra for working with dough.
- 0.5-1 tsp salt (to taste)
- 1 cup buttermilk or yogurt
Filling
- 2 large potatoes
- 1 tbsp butter
- 1 cup onion, finely minced or chopped
- 2 cloves garlic, minced
- 1 tbsp freshly grated ginger
- 1 tsp mustard seeds
- 1 tsp dried coriander (optional)
- 0.75 tsp salt
- 1.5 cup green peas, frozen
- 2 tbsp lemon juice
- cayenne, to taste
Steps
- Fill a large saucepan with about 3 qts of water and set on high heat until boiling. Peel the potatoes and boil until soft, about 15 minutes.
- Meanwhile, make the dough: combine flour and salt in a medium bowl. Make a “well” in the middle by pushing the ingredients out to the side; pour buttermilk or yogurt in the middle.
- Mix the ingredients together: start by gently moving the flour/salt into the well with a spoon, continue until all combined.
- Add flour to a flat surface and hands, and place dough onto surface. Kneed the dough, adding flour to remove stickiness as necessary.
- Make 1-inch round balls form the dough.
- Using a rolling pin, roll out each ball of dough into a oval (continuing to coat the pin and surface with flour as necessary)
- Once the potatoes are very soft, remove from saucepan and into medium bowl. Mash and set aside.

- Melt the butter in a sauce pan on medium heat. Add onion, garlic, ginger, mustard seeds, coriander, and salt.
- Sauté for about 8 to 10 minutes, or until the onions are transparent and fragrant.
- Add mashed potatoes and frozen peas to pan and combine all for about a minute.
- Sprinkle in paprika and mix well.
- Let the mixture sit for 15 minutes before assembling the samosas.

- Preheat the oven to 425 degrees F.
- Fill a small bowl with water and another with oil.
- Take about a tablespoon of potato mix and a rolled out dough oval. Place the mix on the center of the dough. Dip a brush in water and wet the edges of the dough. Fold in half, keeping the bulk of the mixture in the center, and press down on the edges with a fork until it sticks together. Repeat for all ovals.
- Grease a pan generously with oil and place samosas onto pan. Brush the top with more oil.
- Bake in center of the oven for 15 minutes.
- Remove from oven. Reduce oven to 375 degrees F.
- Turn all samosas over and return to oven. Bake for another 10 minutes.
- Let cool for about 5 minutes, then serve immediately.
