Shrimp Saganaki

Time: 40m ( 15m prep, 25m cook )
Complexity: 2/5

A flavorful Greek dish where succulent shrimp are cooked in a savory tomato sauce with garlic, herbs, and topped with crumbled feta cheese

Steps

  1. Prep Shrimp: Rinse shrimp in a colander for about 60 seconds, then pat dry
  2. Marinade Shrimp: In a medium bowl, combine 3 tablespoons of olive oil, the lemon zest, juice, 1 clove garlic, and a generous amount of salt and pepper. Toss in shrimp to coat
  3. Start Sauce: Heat remaining 3 tablespoons olive oil in a large skillet over medium heat. Add onions and cook until softened, about 5 minutes. Add 1 clove garlic and cook for another minute
  4. Build Sauce: Add crushed tomatoes, white wine (or water if not using wine), oregano, and red pepper flakes. Simmer for 10-15 minutes until sauce thickens
  5. Cook Shrimp: Add shrimp to the sauce and cook on high for 3-4 minutes until they start to turn pink
  6. Add Cheese: Return heat to low. Sprinkle crumbled feta over the shrimp and sauce. Cover and cook for 2-3 minutes until cheese starts to melt
  7. Finish: Garnish with fresh parsley and serve hot with crusty bread

Tips

  • Use the freshest shrimp possible for best results
  • Don't overcook the shrimp - they should be just pink and slightly curled
  • Greek feta made from sheep's milk provides the most authentic flavor

Serving Suggestion

Traditionally served with crusty bread to soak up the flavorful sauce. Can also be served over rice or orzo pasta

Wine Pairing

Pairs well with crisp white Greek wines like Assyrtiko or Moschofilero
