Smoked Gouda and Broccoli Flatbreads

Steps

  1. Heat the oven to 450 degrees. Move oven racks to lower and upper thirds of the oven if able.
  2. Combine in a large bowl the Gouda, broccoli, scallions and oil. Season with salt and pepper, stir to combine. 
  3. Place the flatbread on two baking sheets, then top evenly with the cheese mixture. Roast, rotating pans halfway through, until the bread is crisp and the cheese well melted, 8 to 10 minutes.
