Simple, healthy and delicious breakfast sandwich that can be stored in parts for meal prep
Steps
- Add cold water and lots of ice to a small-medium bowl.
- In a large saucepan, add enough water so the eggs can be submerged. Do NOT add the eggs yet. Bring to a boil.
- Once the water boils, carefully place eggs into the saucepan with tongs or using a strainer. Let boil for exactly 6 1/2 minutes. Submerge in the ice bath once done.
- While waiting for the water to boil, begin with the turkey patty's below.
- Meanwhile, combine spices and ground turkey into a medium bowl using your hands.
- Place a medium non-stick pan over medium-high heat.
- Spray pan with cooking spray and make a 4-inch ball from the grouped turkey. Throw the ball down onto the pan and flatten with a spatula.
- Cook for 2 minutes, flip and cook for another 1-2 minutes.
- Toast 2 slices of bread.
- Place patty onto one slice.
- Cut the egg vertically and place each half on the patty.
- Top with second slice, cut in half so that the eggs are cut horizontally.
- Eggs and sausage can be refrigerated. When ready, microwave the sausage and peel the egg. Toast bread and assemble as usual.
