Steps

  1. Wash Rice: In a fine mesh strainer, rinse the rice under cold water until the water runs clear.

  3. Microwave rice: Microwave on high for 5 minutes. Reduce power to 50% and cook for another 12 minutes.
  4. Make the tuna: While the rice is cooking, combine the tuna, mayonnaise, sriracha, soy sauce, sugar, and scallions in a medium bowl. Mix well.
  5. Prepare cucumber: Thinly slice the cucumber, sprinkle with salt.
