Spicy tuna rolls are a classic in the sushi world, but what if you could have the same flavors without all the hassle of using specialty sushi equipment and processes?

Steps
- Wash Rice: In a fine mesh strainer, rinse the rice under cold water until the water runs clear.
- Combine rice ingredients: In a large, microwave-safe bowl, combine the rice, rice vinegar, sugar, and salt.
- Microwave rice: Microwave on high for 5 minutes. Reduce power to 50% and cook for another 12 minutes.
- Make the tuna: While the rice is cooking, combine the tuna, mayonnaise, sriracha, soy sauce, sugar, and scallions in a medium bowl. Mix well.
- Prepare cucumber: Thinly slice the cucumber, sprinkle with salt.
- Serve: Divide the rice between 4 plates. Top each with a portion of the tuna mixture. Sprinkle with the tortilla chips, then top with the cucumber.
