West African Peanut Stew

Steps

  1. In a large saucepan on medium heat, add olive oil and sautee onions and carrots until fragrant, about 5 minutes.
  2. Add garlic, salt, tomato paste, ginger, chili flakes, coriander and white pepper. Mix and cook for about 2 minutes.
  3. Add the chicken and chicken stock and bring to a simmer. Cover and continue to simmer for 10 minutes.
  4. Add sweet potatoes, peanut butter, vinegar and peanuts. Stir until peanut butter is well incorporated. Simmer another 15 minutes.
  5. Remove from heat and serve.
