Ingredients
- 1 Medium Onion, diced
- 1 carrot, diced
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 0.5 tsp salt
- 1 tbsp tomato paste
- 1 1-inch cut of ginger, finely diced
- 0.5 tsp red chili flakes (optional)
- 0.5 tsp ground coriander
- 0.25 white pepper
- 1 lb chicken thighs, cut into chunks
- 32 oz chicken stock
- 2 large sweet potatoes, cut into chunks
- 0.5 cup peanut butter
- 0.5 cup roasted peanuts, coarsely chopped
Steps
- In a large saucepan on medium heat, add olive oil and sautee onions and carrots until fragrant, about 5 minutes.
- Add garlic, salt, tomato paste, ginger, chili flakes, coriander and white pepper. Mix and cook for about 2 minutes.
- Add the chicken and chicken stock and bring to a simmer. Cover and continue to simmer for 10 minutes.
- Add sweet potatoes, peanut butter, vinegar and peanuts. Stir until peanut butter is well incorporated. Simmer another 15 minutes.
- Remove from heat and serve.
